I had to look this up because I had no idea.

First you boil the sugar cane juice over medium-high heat for about 10 to 15 minutes, stirring it occasionally. 
Next you should add a small amount of lemon juice or vinegar to the boiling liquid, then reduce the heat to low and let it simmer for like 10 minutes. 
Now remove the pot from the heat and let the juice cool down. 
And finally, transfer the cooled down juice to a clean jar or bottle  and store it in the refrigerator.

It should last for a couple of weeks in the fridge.
