Harvesting cilantro seeds is about as easy as it gets.
Let your cilantro plants go into seed.
They will form flowers.
Later, the flowers disappear and you will see the seeds on the plant.
Leave them on there for as long as possible, and then harvest them on a dry day.
I usually harvest mine in October or by the end of September.
Keep the seeds spread out on a tray for about a week.
You are now ready to put them away and you can sow them the next spring.
Unlike some vegetables, you don't need a long growing season for the plants to form seeds so you can also do this in short growing seasons.
