I have 5 trays too and I'd not mind having 10 but I think that the more trays you have, the longer it will take to dehydrate food. 
I'm not an expert on dehydrating food but after some research I found out that the more empty surface you have on your trays, the faster the process of dehydrating goes.
So I wonder if I get more trays and I leave more room on each tray the food should dehydrate faster.

I love dehydrating bananas. They certainly are not the quickest to dehydrate!

Mine has 5 shelves as well. I noticed that I have to rotate often because the content on the bottom shelves dries much faster than at the top shelves.
I've also noticed that anything near the center dries faster than what's father away from the center.
I usually rotate once an hour.

Did you know..

The ideal amount of shelves in a dehydrator will depend on the size and model of the dehydrator and the types of foods you plan to dehydrate. 
Generally, dehydrators come with between 4-10 shelves and you should choose the number of shelves based on the quantity of food you plan to dry.

My dehydrator has just 5 shelves and it really is not enough. I plan on getting more shelves eventually. I'm hoping that the shelves can be purchased separately.
Of course, with more shelves, I am sure that the running time will be longer too.
