In the same family, pumpkins preserve for a long time too. 
You just have to keep a close eye on them because they can rot quickly without you knowing it, and then it creates a mess.

I do a lot of drying and freezing, but when it comes to preserving, my fav vegetable is butternut squash. You don't have to do anything at all.
Just pick it and bring it in the house. 
You don't have to freeze, dry. or can it at all.

I plant a lot of butternut squash because I like it and it's easy to prepare. I keep it in my storage room during the winter, and I check about once every other week to make sure that none of them are rotting.

It's easy to still ear butternut squash in July from the previous year's harvest. 
If all vegetables could keep like that, it would be a joy :)
