We have a health sourdough starter now. I never knew that bread could be made without yeast. This sourdough starter is great. My husband bakes bread every week now.

Let rise again for 1 hour
Preheat oven to 400 F = 204 Celsius
Bake for about 20 minutes.
Stick a toothpick in it to check and make sure the center is baked well.
When ready, take it out of the oven and cover it with a towel for a half hour.
Bread is my favorite food, unfortunately, I can only eat whole foods, nothing processed.

Mine does too. To make it softer I put a towel over it as soon as it comes out of the oven. The moisture from the dam,p makes the crust softer and it's easier to eat but as soon as the bread cools it's hard again.
My wife told me to moisten the top with water before putting it in the oven. I always forget.

Knead really well. I make my own bread. It used to be 'compact' until someone told me I wasn't kneading it enough. Now I let it rise, knead, and let it rise again. It makes all the difference in the world.
