Seeds retain viability when stored at cool temperatures with low humidity and limited light exposure. Begin by gathering high-quality seeds from healthy produce. After that, thoroughly dry the seeds and store them in an airtight container. Use a plastic bag with a zipper or a jar. After that, store the container in the freezer or refrigerator. To avoid seed mix-ups in the spring, label the seeds. To ensure the best germination rate, plant seeds as soon as possible.

Some seeds always have to be stored in the freezer in order to stratify them.

I don't actually freeze my seeds except the one that *have* to go through the freezing process, but I do keep them in a cool place in my storage room.

An advantage of freezing is that the seeds are kept at the same temperature all the time.
I'm not sure why I don't freeze them all, but I have to say that my germination rate is always good, and many of the seeds that I retrieve have already frozen in nature before I harvest them.
