Weeds can be problematic for any gardener, and your priority should be to eliminate them rather than treat them as they appear.
A common technique is to dig a trench around your garden plot and line it with sheet plastic.
The trench should be at least a foot wide and as deep as possible.
In this "sealed" area, you can treat pesky weeds by blocking out light, cutting off any flowers as soon as they appear to prevent seed spread, and using a non-persistent weed killer

Many of the weeds that grow in the garden are edible, and it's always too tempting to me to just let them grow but I know they need to go!

Especially lambs quarter. I love lambs quarter and it's my favorite of all the greens.
Other than lambs quarter, there are many edible weeds, but the lambsquarter is the absolute best.

It just takes forever to harvest. My favorite parts of the plant are the leaves, but try and harvest hundreds or thousands of small leaves.

Is it worth it? If you have time, oh yes, it's definitely worth it. I call them freebies. you didn't buy seed, you didn't plant, you just harvest.
