We've all been there. Harvesting season tends to throw a lot of tomatoes and zucchini at us.
As they say around here... it's zucchini season, lock your doors!
Here's my recipe..
- Tomatoes
- zucchini
- mushrooms
- onions
- butter
- cilantro
- pepper and / or salt to taste
Dice the tomatoes after washing.
Slice the zuccini thinly
Dice the onions
Slice the mushrooms
Chop the cilantro
Put butter in a pan and sautée the diced onions
Add all of your vegetables along with the cilantro and some pepper.
Simmer on low heat for about a half hour, stir occasionally.
Serve with mashed potatoes
