1. Store potatoes in a cool, dark place. The ideal temperature is 45-50 degrees Fahrenheit.
2. Place potatoes in a ventilated container. Burlap bags or carboard boxes are great for this purpose. I like small boxes actually and store them in multiple boxes.
3. Keep potatoes away from other produce. Potatoes produce ethylene gas, which can cause other produce to spoil faster.
4. Check the container regularly to see if any of the potatoes are spoiling. Potatoes should not be stored if they have any signs of mold, sprouting, or soft spots.
5. You can store potatoes up to several months, although they might get eyes after a while and get softer.
