I found this out by accident, but I'm so glad I did.
Here you go... Cook some ham bones or rotisserie chicken leftovers, or any other bones that you might have saved, and cook it really well as if you'd be making stock.
Now let it cool down, and the fatty part will rise to the top. Once it's cooled down enough to transfer it to a plastic container, put it in plastic (freezer buckets).
hen totally cool, scoop off the fatty parts and freeze it. You now have a good 'base' that tastes fine.
I use this base instead of butter or olive oil. You can cook much healthier this way, and it's cheaper because butter and especially olive oil is not cheap.
It does give your dishes a good taste. In fact, it will be tastier than cooking with butter or olive oil.
You can also use some of it in soup.
